Mari Mahi Mahi Tacos

This recipe won’t disappoint, and you’ll be feeling the wonderful effects of cannabis once it’s time for dessert (munchies!).
Ingredients Needed: (Yields 5 Tacos)
¼ cup Infused Canola Oil
1 cup Jalapenjuana Salsa
1 pound Mahi Mahi fillets
1 tablespoon fajita seasoning
2 cups chopped lettuce OR cabbage
1 tablespoon lime juice
3 tablespoons chopped cilantro
½ teaspoon salt
1 diced tomato
½ diced onion
5 corn tortillas
1 sliced avocado

Large skillet
Cooking spray
Small bowl
Prep Time: 15 minutes
Cooking Time: 8 minutes
Mari Mahi Mahi Tacos Recipe
1. Season & Cook
A. Spray skillet with cooking spray & heat to medium-high.
B. Sprinkle & press fajita seasoning into Mahi Mahi fish before placing in skillet.
C. Cook/fry up fish for about 4 minutes on each side until flesh becomes flakey.
D. Flake fish into pieces in skillet and set heat to low to keep warm.
2. Create Taco Fillers
A. Combine & mix lettuce OR cabbage, lime juice, cilantro, and salt in a small bowl.
B. In separate bowl, combine Infused Canola Oil, Jalapenjuana Salsa, tomato, and onion.
3. Fashion Tacos & Enjoy
A. Wrap tortillas in a paper towel then microwave 30 seconds (or until warmed)
B. Fill each tortilla with Mahi Mahi, the lettuce/cabbage mix, and the Oil/Salsa mix along with some slices of avocado.
C. They’re ready to eat – Enjoy with some lime wedges on the side for added color and flavor.
Et Voila! If you don’t have Jalapenjuana Salsa, simply add your own diced jalapeno to the Infused Canola Oil (step 2B) along with normal salsa and increase the amount of Infused Canola Oil to a ½ cup. This is a great recipe for hot summer nights and is wonderful when served with beans and rice.
